Camping is a great time to try some recipes that you would never do at home over the stove. Forgo the usual hot dogs and hamburgers and try some different camping recipes for kids.
Breakfast of Champions
For this recipe, you will need a small muffin tin, six eggs, diced ham, shredded cheese of your choice and diced potatoes. Crack eggs into half of the muffin tin, and then sprinkle your cheese of choice and diced ham liberally on top of each egg. In the other side of the tin, put your diced potatoes. These can be seasoned with the spice of your choice, such as salt, pepper or paprika. Set on a flat rock over your campfire to cook or use a cooking grate. Cooking time will vary according to the intensity of the fire, so carefully stir your eggs and potatoes so they do not burn.
Lunch French-Fry Mate
Most kids love French fries, so this recipe is sure to satisfy everyone in the group. For this you will need 4 potatoes, margarine, parmesan cheese, bacon bits and salt and pepper to taste. Cut the potatoes into strips and lay out on a sturdy piece of aluminum foil. Dot the potatoes with a small bit of butter, and then sprinkle on the cheese, bacon bits and salt and pepper. Seal up the foil, but be sure to leave a small space open for a vent. Place overtop of hot coals, turning a few times until the potatoes are tender, between 30 and 40 minutes. Serve alongside the more traditional hamburger or hot dog for a real campfire treat.
Dinner Campfire Pizza
Since pizza is usually another good choice for kids, try this simple variation over the campfire. All you need is bread, preferably white, pizza sauce, mozzarella cheese and small pepperoni. You can also add other pizza toppings of your choosing. You also need butter, but spray butter is a good choice, especially the shelf stable brand that’s great for camping. Use a campfire cooker and spray the inside well with the cooking spray. Place one slice of bread in one of the halves of the cooker, add a small amount of sauce, sprinkle with cheese and add any topping you choose. Put the other piece of bread on top and close the cooker. Push the cooker deep into the hot coals and turn frequently. This should only take about 2 to 3 minutes, as long as the coals are hot. Voila! Campfire Pizza!
Orange Muffin Snack
For a fun and tasty snack, try an orange muffin cooked over the fire. Start with a box of instant muffin mix and oranges. Cut the oranges you will be using in half, and scoop out the whole inside of them. Fill up the halved orange with prepared muffin mix, and then set the other half of the orange carefully on top of the first. Wrap the whole thing up in aluminum foil, and push it down into the hot coals. Cooking time will vary, but should take about as long as the instructions on the box of muffins read—typically about 20-30 minutes. Unwrap and enjoy. Your muffins will have the best orange taste, and you will also have the insides of the fresh oranges for a snack, as well.
